Preheat your oven to 350 degrees, and line a baking sheet with parchment paper.
Put all your dry ingredients into a large mixing bowl and stir a few times.
Add your coconut oil, maple syrup, and vanilla. Stir to make sure all your dry ingredients are coated.
Pour onto your baking sheet and spread evenly.
Bake 20-25 minutes, stirring halfway. If you want bigger clumps of granola, use a large spatula and flip large sections carefully.
