Put 1 tbsp olive oil in a large pot, and saute your onion and peppers until onions are slightly translucent.
Place your chicken into the pot and brown the pieces. Remove all from the pan and set aside.
Melt butter in the pan. Add in the flour and stir into a thick paste. Add in the remaining ingredients stirring together.
Simmer for 1 hour. Add salt and pepper to taste, and cayenne if you want a little heat.
Serve over rice and enjoy!
