  • 2/3 cup cooked & mashed sweet potato
  • 2 1/8 cup flour
  • 1/2 cup shredded cheddar cheese (feel free to add more!)
  • 3 tsp baking powder
  • 1/2 tbsp dried chopped rosemary
  • 1 tsp salt
  • 1 tbsp brown sugar
  • 2/3 cup buttermilk
  • 1 tbsp milk
  • freshly ground black pepper

  1. Preheat the oven to 450 degrees and line a baking sheet with parchment paper.

  2. Mix the sweet potato, cheese, and rosemary in a small bowl and set aside.

  3. In a larger bowl, combine the dry ingredients. Once incorporated, add in the buttermilk and mix until just combined.

  4. Add in the sweet potato mixture and incorporate. Don't overmix!

  5. Turn out onto a floured surface and knead 2-3 times. Roll out to 1" thick and cut into 2" circles. Place onto baking sheet, leaving at least 2" between each biscuit.

  6. Brush top of each biscuit with a little milk, and sprinkle freshly ground black pepper over tops. Bake for 10-12 minutes or until golden brown.
