Mom’s Chicken Salad

Today we’re doing another recipe that’s a great crowd pleaser if you’re feeding lots of people, and its also one that is perfect for summer – whether you’re eating on the porch, inside, or taking a basket for a picnic. And you don’t have to heat anything up either!

This is a really simple recipe, and sometimes people are surprised that it has apple in it. But even if you aren’t sure – give it a try. Its simple, but delicious!
Its also SUPER easy. Peel and core a green apple – we use Granny Smiths for this – and then chop it into a fine dice. Clean your celery stalks, chop those into a fine dice, and then chop several sprigs of fresh dill until you have at least a teaspoon full. You can add more or less if you like.
Drain the chicken, dump it into a bowl, flake it up a bit with a fork and them add all the other chopped ingredients. Put in 1/3 cup of mayo and mix it all up. Give it a taste. If you want it a little creamier, add more mayo one tablespoon at a time until it reaches whatever consistency you prefer. Then add your salt and pepper to taste. I always add more than Mom does, since she doesn’t cook with salt.
I think it benefits from a chill in the fridge for an hour or two, but you don’t have to. Then you can serve it with crackers, in a wrap, or just on some bread.
- 1 medium green apple, chopped fine
- 1 can (12.5 oz) Chicken in Water
- 3 stalks celery, diced fine
- 1 tsp fresh dill, finely chopped
- 1/3 cup mayo (add by the tbsp to taste)
- S&P to taste

Drain chicken and pour into bowl, flaking with fork.

Peel one green apple and chop to a fine dice.

Finely chop one tsp of fresh dill, and 3 stalks of celery.

Mix all chopped items into the chicken, then add mayo and mix. Add more mayo a tablespoon at a time if needed, until the desired consistency is reached.

Enjoy with crackers, as a sandwich, or in a wrap!
