I have been trying to eat healthier and adding yogurt to my morning has been great – except that I needed something with a little crunch on it. Rather than go buy a bunch of granola, I decided to make my own. And its delicious!
You can easily substitute things out – If you don’t want to use pecans and almonds, use whatever nuts you like best. Dislike chocolate? Don’t use any. Want a different flavor? Use pecan syrup or hickory syrup. Add any dried fruits you like. It really has lots of ways to dress it up and make it your own.
- 4 cup old fashioned oats (don't use quick oats)
- 1 1/2 cup pecans and almonds, mixed and chopped.
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp allspice
- 1/4 tsp nutmeg
- 1/2 cup coconut oil, melted.
- 1/2 cup maple syrup
- 1 tsp vanilla
- 1/2 – 2/3 cup dried fruits (opt)
- 1/4-1/2 cup mini chocolate chips
Preheat your oven to 350 degrees, and line a baking sheet with parchment paper.
Put all your dry ingredients into a large mixing bowl and stir a few times.
Add your coconut oil, maple syrup, and vanilla. Stir to make sure all your dry ingredients are coated.
Pour onto your baking sheet and spread evenly.
Bake 20-25 minutes, stirring halfway. If you want bigger clumps of granola, use a large spatula and flip large sections carefully.
