Gluten Free Monorail Cafe Banana Bread


I was craving some banana bread, and decided to try and make a gluten free version of the Monorail Cafe Banana Bread out of one of my Disney World cookbooks. I was really pleased with the results!
I used frozen bananas, which – if you didin’t know – is an easy way to make them mushy. Once they thaw they basically squeeze out of the peel like you’re squeezing toothpaste. No mashing required.
The recipe is pretty easy, and really self explainatory. I do have to say that I feel like the gluten free version is a little quicker to dry out, so make sure you wrap it well/put it in an airtight container.
- 1 cup butter, melted
- 2 cups sugar
- 2 tsp water
- 2 cups bananas, mashed
- 1/2 tsp vanilla
- 2 cups gluten free flour (cup for cup blend of your choice)
- 1 cup oat flour
- 1/2 tsp salt
- 2 tsp baking soda
- 1 tsp baking powder
- 1 cup nuts or chocolate chips

Preheat the oven to 350 degrees and grease 2 loaf pans.

Mix the melted butter and sugar until well blended. Add your eggs, one at a time, and mix in well after each.

Add the bananas and vanilla, then add the dry ingredients. Mix until everything is combined. Add in any nuts or chocolate chips and fold into the mixture.

Divide the batter equally between the two pans. Sprinkle with an additional half cup of nuts or chips.

Bake for 1 hour, or until a toothpick inserted in the center of the loaf comes out clean.
