Disney’s Contemporary Resort Granola Snack Bars

Today I’m making the Contemporary Resort’s Granola Snack Bars. Disney Parks released the YouTube video recipe recently, and I figured it was an easy way to use up some homemade granola. If you want to watch the video, you can view it here.
The recipe is basically the same principle as rice krispie treats. Super easy, and comes together in no time!

You’re going to need mini marshmallows, granola (homemade or store bought – whatever you have will work), peanut butter, butter, and chocolate chips.
In a saucepan on medium heat, you need to melt down your butter. Then add your marshmallows and melt. I stir mine every so often until the marshmallows start to melt, then I stir pretty constantly. It takes a bit to get to the melting point, but once it does, it goes fast.
When it melts, pull it from the heat and stir in your peanut butter. It will melt in pretty quickly. Then you dump in your granola and stir it well.
You need to spray an 8″ x 8″ pan with cooking spray, and then pour in the mixture. Press it into an even layer in the pan with a greased spatula (or your hands). Then you sprinkle your chocolate chips over it. I didn’t have mini chips, so I used larger ones, and they worked just fine. I pressed mine in just a bit to make sure they wouldn’t fall off.
Once its done, put it in the fridge to chill. I cut these into small squares, because they are pretty sweet and you don’t need much!

- 3 1/2 cup mini marshmallows
- 2 tbsp unsalted butter
- 3 tbsp peanut butter
- 2 cups granola
- 1/2 cup mini chocolate chips

Grease an 8" x 8" pan and set aside.

In a saucepan over medium heat, melt the butter, and then add the marshmallows. Stir until melted, then pull off the heat and add the peanut butter. Stir until combined.

Add in the granola, and mix well. Pour into prepared pan and press in evenly.

Add chocolate chips over the top, lightly pressing into the bars.

Refrigerate for a few hours, then cut and serve.
