
Disney Inspired Sweet Potato Biscuits
While I have not been to Disneyland yet, I’ve been seeing a lot of recipes from Disneyland that I’d like to try. One of these was the Sweet Potato Biscuits from the Blue Bayou Restaurant. So as I was going through the freezer and realizing just how much sweet potato I had frozen after our MASSIVE sweet potato harvest at the end of the summer (seriously – who knew two plants would make SO MUCH SWEET POTATO), I thought now would be a good time to try it!
These are really good with a nice beef stew, especially with the rosemary. I think the only thing I might do different next time is to up the amount of cheese in these.
Now, I’ve never eaten the original version, so I can’t say how close it is to being right, but I can say they are quite tasty! If you’ve had them, and then make these, I’d love to know what you think!
The Recipe
You can use sweet potato from a can, or boil off a sweet potato, or use frozen that’s been thawed. I don’t really think it matters too much in this case. For me, I used some that had been boiled off and then frozen. The important part was that it was smooth and easy to incorporate.
I measured out my sweet potato, cheese, and rosemary in a bowl and stir them together. Then I measured the rest of my dry ingredients into a larger bowl, going through it with a whisk to help mix them together before I added any liquid.
After that, I added the buttermilk (or you can use the same amount of milk with a little less than a teaspoon of viengar mixed in) and mixed it until just together. You don’t want to overmix! Once that was together, I added in the sweet potato mixture and mixed again. At this point, I did find it easier to use my hands.
Turn it out onto a floured surface and knead it 2-3 times (unless you’re like me and did it in the bowl), then roll it out to about 1″ thick. Cut 2″ circles and place on a parchment lined cookie sheet. Bake for 10-12 minutes until golden brown.
Enjoy! Next time, I’ll probably make some honey butter to go with them, because I think that would pair really well.

- 2/3 cup cooked & mashed sweet potato
- 2 1/8 cup flour
- 1/2 cup shredded cheddar cheese (feel free to add more!)
- 3 tsp baking powder
- 1/2 tbsp dried chopped rosemary
- 1 tsp salt
- 1 tbsp brown sugar
- 2/3 cup buttermilk
- 1 tbsp milk
- freshly ground black pepper

Preheat the oven to 450 degrees and line a baking sheet with parchment paper.

Mix the sweet potato, cheese, and rosemary in a small bowl and set aside.

In a larger bowl, combine the dry ingredients. Once incorporated, add in the buttermilk and mix until just combined.

Add in the sweet potato mixture and incorporate. Don't overmix!

Turn out onto a floured surface and knead 2-3 times. Roll out to 1" thick and cut into 2" circles. Place onto baking sheet, leaving at least 2" between each biscuit.

Brush top of each biscuit with a little milk, and sprinkle freshly ground black pepper over tops. Bake for 10-12 minutes or until golden brown.
