Agrabah Market Falafel

Hello everyone! I am finally back with the blog and I’m so excited to share with you again!
For this recipe, I wanted to create something to celebrate the release of Aladdin, and join some other awesome Disney bloggers in making a celebratory post. We’re actually running a giveaway, so be sure to check out my IG!
If you’re looking for a delicious, easy recipe, this is definitely it! It’s also perfect for vegan or vegeterians, and it’s pretty quick.
I do this in my food processor, but you could probably do it with a fork for a rougher texture if you wanted. However, with a four month old, faster and easier is better.
Just pop all the ingredients in the blender (and feel free to substitute spices if you want something omitted or added) and give it a whirl until everything is well combined.
I line a cookie sheet with parchment paper, and then scooped about 1/4 cup of the mixture onto the sheet. Flatten them out a bit to get them to an even thickness, and spray with a little cooking spray to help them crisp up a bit. Pop them into the oven for about 25 minutes, and let them cool for five o the vcookie sheet when they come out.
You could change the size bigger or smaller as you like, but you will need to adjust your cooking times to match.
I also made a garlic yogurt sauce to go with them, but it is REALLY garlicky, so keep that in mind. It was just a clove or two of garlic with a pinch of salt ground into a paste in my food processor, then mixed with a teaspoon of lemon juice into a cup of Greek yogurt. It’s good with the falafel, but keep in mine that a little goes a long way!

- 2 cans chickpeas, drained
- 1/2 small onion, chopped
- 1 tbsp parsley
- 4 tsp garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1/8 tsp cayenne
- 1 tsp cumin
- 1 tsp baking powder
- 1/2 c flour
- 1 tsp tahini (optional)
- 1/2 tsp turmeric
- 1 tsp olive oil (if needed)
- 1/2 tsp smoked paprika

Preheat the oven to 400 degrees. Line a cookie sheet with parchment paper, or spray with cooking spray.

Put all ingredients except olive oil in a food processor. Blend until combined. For a rougher texture, blend for less time. For smoother, blend longer.

Scoop your mixture onto the cookie sheet in 1/4 c amounts, then flatten until even with fingers.

Spray lightly with cooking spray to help crisp tops, and put into hot oven for 25 minutes.

You can make these smaller or larger to your liking, but you will need to adjust your cooking time accordingly.

Remove from oven and let cool 5 minutes before enjoying!
